Ingredients:
1 cup poha (flattened rice)
1 medium-sized onion, finely chopped

1/4 cup roasted peanuts
1/4 cup green peas (fresh or frozen)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
A pinch of asafoetida (hing)
8-10 curry leaves
2 tablespoons vegetable oil
1 tablespoon lemon juice (optional)
Fresh coriander leaves for garnish
Salt to taste
Instructions:
Rinse the poha under running water in a colander or strainer for a few seconds. Gently toss the poha with your fingers while rinsing to ensure even moisture.
Let the rinsed poha sit in the colander for about 5 minutes to allow excess water to drain. The poha should soften but still retain its shape.
In a large pan or kadai, heat the vegetable oil over medium heat.
Add the mustard seeds and cumin seeds to the hot oil. Let them splutter.
Add the asafoetida (hing) and curry leaves to the pan. Sauté for a few seconds until the curry leaves release their aroma.
Toss in the diced potatoes and green peas. Cook for a few minutes until the potatoes are partially cooked.
Add the chopped onions and green chilies to the pan. Sauté until the onions turn translucent and lightly golden.
Mix in the turmeric powder and roasted peanuts. Cook for another minute to infuse the flavors.
Gently add the softened poha to the pan and toss everything together. Be careful not to break the poha while mixing.
Season with salt according to your taste. If desired, drizzle some lemon juice over the poha for a tangy flavor.
Let the Poha cook on low heat for 2-3 minutes, allowing all the flavors to blend.
Turn off the heat and garnish the Poha with fresh coriander leaves.
